Some years ago I self downgraded upon checkin on a CPH-STR flight on SK because I travelled with two colleagues in eco while I hold a ticket in biz. This was no problem at checkin and the agent quickly produced me an eco bp and a seat next to my colleagues. I still got biz miles credited by m&m.

So it seems there is a procedure to do this while checkin in. Probably not onboard the aircraft.
