Plus, how do codeshares work in terms of elite status priority (e.g. CO codeshare on UA metal, would CO Plat or UA 1P be ranked higher)?
To be honest, I don't really know how to put different # into mixed CO/UA itinerary. I believe that topic was covered before on here, since it's not to my interest I did not open it (just read the thread title ). Moreover, some have reported that, with a mixed itinerary, some problems have occurred. For example, if your UA flight got upgraded, for some weird reasons, your whole revervation is "broken".

For your second question, if you click on the link that I have provided, 1P and PLT are cleared at the same time (72 hours) and have the same priority on UA metals.

72 hours Presidential Platinum, Platinum, Premier Executive, Gold (UA metals only)

However, take a quick look at your reservation, if it is mostly CO metals, by all mean, put in your CO PLT # for the whole reservation because PLT ranked higher than 1P on CO metals. If it's mostly UA metals then IMO, really doesn't matter for the reason mentioned above.

Hope that will somewhat answer your question.
