Take the $700 savings and fly TK. If it is reasonable buy up to premium economy. Turkey is quite an amazing place though it has been awhile since I have been. As others have said the Israeli stamp is not an issue. With the savings you should be able to treat youself to PE and a nice hotel on the sea, massage and a good meal.
As a people the Turks are quite nice.
