I fear you are correct on the AA miles. You could get credit for those flights on another scheme (e.g. AsiaMiles).

Moreover, your itinerary may not work...

You are only allowed two stopovers in the continent of origin. At the moment you potentially have four (FCO/MUC, BHX, EDI, LHR) so you wuld have to make two of them transits.

Also, you appear to have five segments within SW Pacific when you are only allowed four in the basic price so you would need to pay extra for one of them.
