My cats are going to mount mutiny on me, so I am thinking of taking them with me to NY in Sept. My questions are:
1- Would they be quarantined if I pass by LHR?

I know that I have to check on health rules etc etc..
1. they will not be quarantined if they have a pet passport issued at least 6 months prior to travel. To qualify, they have to have a rabies innoculation, with effectiveness validated by a blood test (sometimes an animal needs two or more innoculations before sufficient immune response is obtained). I think you may also need a vet certificate issued in the days immediately prior to travel.
2. no idea about Open Skies...but I know through LHR you will have to put the animals in the hold.
3. with BA...yes, lots of help, since the baggage handlers and Animal reception centre will handle everything
4. no animals other than service dogs in the cabin as far as I know. Other airlines will vary...but not if travelling via UK
5. assuming you find an airline that will take them in the cabin - yes I imagine you will need a ticket unless their carrier can be fitted under the seat in front of you (an Austrian friend has taken her cat from ARN - VIE in this way). However for 2 cats TATL, this is unlikely to be a suitable travelling means unless your cats are very very small!
