Yes you can bring a laptop/camera bag in addition to your cabin luggage (e.g. rollaboard). NH is not that strict - I have never seen them weigh luggage.

Yes you can use your kindle/laptop/tablet/smartphone during flight (except during takeoff/landing). You're supposed to use them in airplane mode but the cabin attendants don't really check.
