Question "Odd" Seating Arrangements on Flights

I've often wondered how airlines "seat" passengers in coach. For weight and balance, for convenience, etc. Once in a while I see very "Odd" seating arrangements.

The oddest I have seen was a flight from Portland, Oregon to Cincinnati, Ohio about 15 or so years ago. About. L 10 Aircraft (I think), empty, and man, I mean EMPTY. Flight crew, and about five (5) of us. I'm not kidding. Ghost flight! We knew in the gate area that we were in for a treat, because there were about five of us. One of the few flights were they said "Boarding all rows all passengers" from the first announcement.
So I sit in my seat in Coach. Window.

Huge dude sits right next to me. Rest of the cabin empty.

I look at him and say "Hey, there's plenty of room".
He says "Yea, but I'm supposed to sit in this seat. See, here's my seat assignment."
Sure enough, it was right next to me.

When I realized he was not going to move, I asked him to get up so I could move. He said "It's going to be a long flight with no one to talk to."
I said "I'll remember that when I'm sleeping."

Odd that just about the entire coach cabin was empty and we both had seat assignments right next to each other.

Maybe this has changed since that time, but odd to me.
