The 0120, CX845, turns off CX846 which arrives 2225. So 846 is what you want to track as an inbound. If that doesn't leave HKG on time, or diverts, your vacation is in jeporady. As for the departure from HKG, much harder to tell as it is a hub. Somebody else will have to chime in on that.
Also, if 846 cancels, it is doubtful that all of 845's passengers could be reaccommodated on 889, the pm 1-stop via YVR or even 841 (the am departure). But of course, 846 could be scrubbed 15 hours before your departure time, so you should be packed and ready to head to JFK in this case. In a perfect world, well, everything goes smoothly.
But in the scenario that 846 scrubs early into the flight, I would head immediately to JFK. Heck, you could potentially get the 1455 afternoon departure. The point is to be physically ready at a moment's notice, and don't overlook YYZ as an option. If you have FF miles, book LGAYYZ as a precaution and then cancel once you know all is right with your inbound aircraft.
