I suggest you reserve your Japanese food cravings for Beijing or Shanghai. You should be prepared to part with a fair amount of money (though not always; lots of nice 居酒屋 places in Shanghai), but will be able to avail of delicacies that are not on offer in Kansas City as long as you select the right restaurants.
Some second tier cities (e.g. Dalian, Shenyang, Qingdao) are on par with BJ and SH in terms of high end Japanese cuisine, but Nanjing is not among these ranks (check out your history book if you want to understand the "back story").

My student's uncle, is the owner of 60 restaurants in Nanjing.
Among them are 3 Japanese restaurants. One of them is just opposite of ZijinTaiHe Hotel that I referred to
susie.
These are some of the best quality Japanese restaurants outside of Japan. On par with best Japanese retaurants in BJ and SH.
He hired someone who was a chef in Japan for 10 years. The beef, fish etc. are all high quality ones.
For lunch, it's about 200 RMB per person. Of course you can spend a lot more than that.
