This is a frequent occurrence. I think DL has exactly enough BE configured 757-200's to cover the required routes. When one goes down for maintenance, they sub in a 767-300 in its place. I'd say every other day or so you see a 763 plying the JFK-SFO or JFK-LAX route.
The 763 provides for some great upgrade opptys on the transcon. If your company doesnt pay for j, and you see a 763 on the transcon, make that your flight if any way possible.
I've seen 763s loaded on the transcon routes a few days prior to departure.
