I bought tons of choice hotel points , during discover america promo (at roughly $35 for 10k) ,mainly for this purpose. At the time it was 10k points for the room and $35 pp for the all inclusive package (food/drinks) works good to beat the single supplement prices for those traveling alone. then they offered 20k for 2 people AI at barcello's, 5k more in high season (winter)...Having stayed at Barcello in Cancun' I thought it a good value....they also have a highly rated (on trip advisor) AI resort in PVR, a few hotels in dominican republic, costa rico, and nicaragua. they are a good mid range AI. I havent got the chance to use them yet, and have to spend 180k by the end of next year before they expire. The last few times in mexico we did Riu palaces, and this year was Hawaii and Jamaica vacations, though we did spend 20k choice points for a quality inn in Savannah Ga. for the 4th of July. Use whatever airline miles you can for flights then wait until 60 days out to reserve a barcello award.
I would find a program/resort that comped young children if possible and wouldn't consider using an airlines "vacation package" as they are usually way overpriced in real cash or miles value.
Wyndham and priority club have a couple of AI resorts, i guess it depends on which points you have the most of.....
My favorite was using Capital One points for Riu Palace Negril and the hotel in Montego Bay this May...we used $100 cash and 70k Delta miles for the flight. we couldnt find award flight, so used points and cash, (and $100 statement credit for delta ticket was part of signup deal on the $175 a year Amex DL Platinum wife got) we only had to pay for cabs and souvineers.
Using more Cap1 points for a return to Riu in Playa del Carmen this winter, combined with air points award, we get another mostly free AI vacation.
I could get used to this, and have enough points for a couple of years now!!
Doing it with 6 people would be a bit trickier, but possible if you have the points.
