I've eaten there half a dozen times and always had a lovely experience. The "discovery" tasting menu is a reasonably good deal given the quality and level of service, the alc not as much. Did you alert them to any problems with your food? They've always seemed very attentive/responsive to subjective things like seasoning.
In terms of the salt on the carpaccio, that was probably fleur de sel.. it's supposed to be that way.
