Here is another menu from TWA’s spectacular First Class Ambassador Service. This was offered on a four hour New York to Denver flight in 1972. The aircraft was a 707-331. Some airlines have claimed that they couldn’t serve elaborate menus on their narrow bodied aircraft because the galleys were too small. Perhaps because TWA also used its 707s on international services, their galleys were of a sufficient size to support this menu…

SHRIMP CARDINAL
In preparing this dish, pan fried fresh jumbo shrimp from the Gulf of Mexico are added to the colorful Cardinal Sauce that has been flavored with lobster. Served on a bed of rice

VEAL MEDALLIONS HUNTER STYLE
Thin scallops of milk fed veal are lightly sauteed in butter, then topped with a mellow sauce of sliced mushrooms, shallots, white wine and tomato bits
