I am not familiar with Texas innkeepers laws, but of the states I have worked in, unless the hotel is shown to be negligent in securing your room in some way (leaving the door open, issuing a key to an unauthorized party, etc.) the hotel is not liable for your loss as long as you were given access to a safe or safety deposit box. If you asked, and they refused to secure your items, then they would be liable for the loss. It also usually states a dollar amount of liability for guest items that have been stored in the safe/safety deposit box. All of this can be found on the signs no one ever reads that are posted usually on the back of room door, but at least somewhere in the room.
