In case anyone else ever wonders, I now have the answer, and it's not what I might have expected.

There's a single printed menu for all flights ex-JFK/MIA/MCO.

For the first meal, they literally do serve the same breakfast they serve at the end of the overnight flights, apparently:

Breakfast
Seasonal fresh fruit
Various types of deli meats
Warm bread
Ham and Brie cheese omelette served with bacon
Turkey breast and cheese Panini
Yogurt
Cereal
Honey and jam

A tray was distributed with one dish of fruit and one dish with ham, turkey, gouda, and a tiny wedge of tomato. A breadbasket was offered (muffins, croissants, etc.) and a selection of yogurt and jam was offered. As people finished, flight attendants asked if they wanted a panini or omelette. My neighbor got the panini, which was very small and looked crunchy. I could smell the omelettes, but did not see any.

The second meal is served about halfway through the flight duration, which was a big surprise for me. I couldn't figure out why they were not only distributing little dishes of nuts and glasses of champagne, but also waking up sleeping passengers. Choices of appetizer, entree, and beverage had been taken right after breakfast, from this menu:

Appetizers
Green salad served with a tomato and seafood Ceviche
Greens accompanied by Prosciutto with asparagus and mango salad
Assortment of Bread Rolls
Soup
Creamy carrot soup
Entrees
“Mahi Mahi” on Beurre Blanc sauce served with mashed potatoes, bok choy and cherry tomato
Chicken fillet on an orange sauce accompanied by lemon grass rice and zucchini
Mushroom Agnolotti with Bechamel sauce and tomato

Cheese
Various types of cheese

Desserts
Chocolate cake on caramel sauce
Ice cream
Fresh fruit

The soup was omitted. Also the starter and main course were served together on a tray, not in courses, not sure if that is normal or not.

One guy asked for both the fruit/cheese plate and cake, and the flight attendant said he could not have them both, because there had to be food for everyone. The grouping of cheese with fruit doesn't align exactly with the menu, obviously.

The wines:

Champagne: Drappier Carte-d-Or
Dr. Burklin-Wolff Wachennheimer Altenburg Permier Cru (Pfalz/Germany) – Riesling
Alain Brumont Gros Manseng-Sauvignon (VdP Cotes de Gascogne/France) – Gros Manseng/Sauv Blanc
Jean-Luc Thunevin 3 de Valandraug (st. Emilion/Bordeaux/France)
Bodegas Protos Reserve (Ribera del Duero/Spain)

I tried all three of the French wines, and the Gros Manseng-Sauv was my favorite.
