If you want less targeted services, results, ads, you have two easy options:

1) Don't use Google products. Use Bing, Yahoo, etc. (Though be aware that most others track personal data as well.)

2) Change your privacy settings to be as tight as you'd like. Google allows very simple tweaks that will cut off the personal information you share. Of course, most critical data is anonymized and used to serve you without identifying you, but if that's not reassuring enough, just turn it off.
