Mainly because it helps pass the time.
I usually prefer the N lounge but the appearance of the cocktail bar makes the S lounge worth a visit. Most of my T5 flights are B gates so that involves a trip to the B lounge for a final tipple while boarding starts.
I was once stopping in a Heathrow hotel the evening before an early flight. I was bored so decided to to a pub crawl of all of the landside bars (this was before T5 opened). No other reason than to explore the airport and it gave me something to do.
