The Alsatian dish you had is called (French) Tarte Flambe or (German dialect) Flammekuche. There's a recipe in a Wolfgang Puck cookbook which produces a reasonable approximation of the original. Frau Gummer8 & I practically live off of it when we're in Alsace...
