There are plenty of nonstop flights from the JFK/EWR to China, if a nonstop flight is what you want, CO or CA would be your choices.
If you are concerned about a full flat bed your best bets are AC, CO, UA (most flights), SQ (most flights),NH (some flights) and OZ (some flights).
If IFE is important, SQ is excellent, most are OK, AC tends to break down (Thales IFE).
Food will all be OK if you want western food, if you want asian food, SQ, NH and OZ are the way to good.
Overall level of cabin service is better on SQ, NH and OZ than UA, CO and AC.
