My question is .... what am I missing here. I still hear people paying for their entire stay with just points. But isn't that 280K points for a 7 night stay? Is this really worth it?

thanks.
Let's do some math here. Marriott allows you to convert points to miles at a max rate of 125k to 50k. So your 100k airline miles are worth 250k points.

You say that 100k airline miles buys you a $4000 ticket. 250k points, as has been said, buys you seven nights at a tier-8 hotel. That rounds out to approximately $571 per night, which is actually a reasonable rate for the hotels in question. You can, on this basis, argue that the hotel points are giving you a much more attractive rate of return than the airline miles.

I'm not quite sure why you feel otherwise.
