m4a is standard aac, which is playable on many non-apple devices.
I don't think Apple provides any way to migrate them to a another format directly, there are probably third party tools to break the digital rights management, and convert them.
there hasn't been drm in several years and itunes will convert to mp3 or aiff.

as has already been posted, the music can be downloaded again (or restore it from a backup, you did make a backup right?). prior to last week you had to explicitly ask to do that, but now it's a couple of clicks in itunes.
