There is very good fish in LAS (and PHX); often better than you find in cities next to the ocean. I suppose good fish is often flown in these days, rather than offloaded from the fishing boats Masa tends to have excellent quality control though I haven't eaten there in LAS. It will cost more than in LA or SF, fwiw.
