55 minutes is tight but plausible at AMS. The terminal is big (you'll likely have to cross from E to B or A), and you will need to clear immigration and reclear security. KLM probably has a number of later flights if you misconnect.

Don't know about your timing via JFK, but you won't have to clear immigration or security, though if you do misconnect at JFK your options will be limited (probably reroute via AMS or wait a day).
