By definition, a segment on your trip needs to be 'open' (meaning you get from one point to another without flying as part of your ticket) in order for it to be an 'open jaw.' You are not doing that as you've proposed your itinerary.
Here is what I would do on the BA ticket:
Outbound, fly SFO-LHR-CDG (San Francisco to London Heathrow to Paris CDG)
Return, fly AMS-LHR-SFO.
Take the train or book a separate flight between Paris and Amsterdam.
This will qualify you for a round-trip BA redemption ticket, with an open jaw (being that portion of your trip from Paris to Amsterdam, which is not part of this booking).
There is no way to include your flight from Paris and Amsterdam into a standard BA award redemption.
