I flew Copa from SCL (Santiago, Chile) to PTY back in January with a 2am departure. Was upgraded to "Clase Executiva". We were served a full 3 course dinner meal shortly after departure, and then a full breakfast shortly before landing.
If I recall correctly, we were given a menu (similar those found on CO's trans-atlantic flights) with multiple choices for each meal.
I found the food, beverages, and overall service was very good. ^^
Flying Copa again in September out of JFK. Lets see if they are consistant.
