I have only taken the Thalys between Paris and Brussels and I can say that there really isn't much to see via the train. Think about renting a car if you really want to see things along the way. That being said, given the choice between flying or taking the train, I would take the train. It would be quicker in the long run. Also, I would think about visiting the town of Bruges while in Belgium.
