If you're on a connecting flight, you can see if DL has an interline agreement with Aer Lingus and just have your bags automatically transferred. If not, you'll have to collect your baggage (after passport control) then re-check your bags with Aer Lingus.

One strategy, assuming the room is big enough for the three is to book a single room in sequence - that is, you get it for the first hour, your SO for the second, and the child for the third. This is no different than each getting a single for one hour. If the Yotel dragon can't do the maths, they need to get a new dragon.
