Potatoes: The New Corn?

After a long hiatus from domestic travel (almost two years of only international flights), I've found myself on a bunch of domestic flights in the past two months. In the most recent six or seven flights, I have been served the same dish - cold steak over romaine lettuce with an ENORMOUS side of potatoes.

The beef has generally been tasty and pink; the lettuce has always been fresh.

But the potatoes. Why the potatoes? On what cold steak salad have you ever seen potatoes? Or so many potatoes?

I'm certainly happy to get the upgrade, and I appreciate that there is now more plentiful food in general up front. But do they not have any other meals domestically these days? I've had this dish on flights in all directions, at lunch and at dinner, on 1.5-hour flights and 5-hour flights.
