If you've got a car, you should head out of Anchorage. No sense staying in a semi-lackluster city when you have the beauty of Alaska at your beck and call. Since you only have the day, I'd head south. Depending on how much time you have, I'd suggest either aiming for Girdwood/Portage or, if you have longer (like leaving late that night), all the way to Seward (a great day trip). Plenty of scenery and things to do on the way--see http://alaska.org/driving/classic-day-drives.htm. Consider a glacier cruise out of Whittier (about an hour south of Anchorage) or a wildlife/glacier cruise out of Seward (2.5 hours south of Anchorage; don't plan on getting back to Anchorage before about 9-10pm in that case). If you only have a very short time, consider a hike in Anchorage's backyard. Flattop Mountain is accessible from residential roads on the outskirts of Anchorage (a 20-minute drive from the airport) and can be summited in 1-2 hours (depending on your fitness level). It provides beautiful views of both Anchorage (to the west) and the wild Chugach mountains (to the east--looking east, you'd swear you were in the middle of nowhere). Other hikes can also be done in the area (Little O'Malley/the Ballpark, Hidden Lake, etc.) as well as on the way to Girdwood (Bird Ridge, Winner Creek, Crow Pass [the top of the pass itself is just a few hours from the trailhead outside of Girdwood], etc.).

If hiking isn't your thing, you could consider a flightseeing tour from Anchorage either towards Denali, the Chugach Mountains (to Knik Glacier or elsewhere), or Prince William Sound. And if any of the other locals is still able to meet up with owflyer, feel free to post. (I know a few will be working and a few will be out of town, but perhaps there'll be someone to keep ya company. ) I should be able to at least say hi upon your arrival at the airport.
Much appreciated, will review the options. Plan to be in ANC by 5PM on Sunday if anyone is around, driving in from Fairbanks.
