It's not all cold!! As an ex-resident of southern hemisphere (in various parts of Australia), I can assure you it's not all cold. Some parts of it is great in 'winter' - but they do not have winter as most of us know it. In fact, it's the best season to visit some of the places, as it is not excessively hot as most other time of the year is.
I highly recommend Palm Cove, Mission Beach, Port Douglas etc in northern Queensland, Australia, in winter. Warm and pleasant, but not sticky and hot.
However, if I were the OP, I would be inclined to go for city breaks or the Mediterranean cruise. But that's just my preference as I am far from a beach person.
