Talk is cheap - in what currency was the your "default amount = CNY" slip ultimately posted in? It could still turn up in USD.
Sadly, I won't find out because I voided the transaction and paid with a Union Pay card. But, in the unlikely event that HSBC is so brazen as to still attempt DCC in spite of this new unambiguous language, disputing it would be as cake walk.
