Smart casual is perfectly fine for breakfast. I would just wear whatever I wanted to wear to go out after breakfast.

There are a lot of young guests, and this is a Park Hyatt, so everyone will get good service. It`s not a stuffy old Grande Dame hotel (and most of the Grand Dame hotels in Paris aren`t really stuffy anyway)
