I prefer a plane with a lie flat seat. That puts you on Continental or Air Canada. American is good, but the seat is "almost" flat. It has a bit of a pitch to it and you will have to readjust as you slide down it during flight. I would do Continental and call it good and easy.
You can get lie-flat on UA and on the 747 upper deck too.

YYZ-NRT is shorter than IAH-NRT, so the net is only about 1000 more nm. AC's J is probably, on balance, nicer than CO's and AC's on-board service is much better.
