turning united credit into cash

hi guys and gals,
i know this has to have been asked many times before and i did a forum search but could not find a thread to give me a definitive answer.
my wife who was attending her grandmother's funeral bought tickets on united. united ended up canceling the last leg of her flight home(mechanical) and could not get her a flight until late the next day so she booked on alaska to get home on time. united would not at the time give a refund but they did give her a credit. i then compounded the error by trying to use the credit and then found out that the ticket was issued in her name not mine and is not transferable. So she received another credit. doh!
so she now has 700 of credit that must be used/?booked in 6 months and no upcoming travel in the future.
i tried to research buying a refundable ticket and then cashing out but i understand you will not receive the total amount??
or buy a refundable ticket to extend the expiration and then try to exchange into a nonrefundable ticket if the need arises? i would really prefer to have the 700 back and do not know if there is a way. thanks in advance
