It would appear that I don't need to apply for a
long sejour visa until I get to France if France it is:

Canadian citizens who intend to settle down in France with their EU spouse, do not have to apply for a visa prior to their departure. Upon their arrival to France, they should apply directly for the " Titre de Séjour" at the French "Préfecture" of their residence.
Now to find out what documents are needed.
