You want your portable fridge in addition to 2 carry ons?

You are entitled to a carry on (like a roller) and a hand bag. Not a roller, a backpack, a purse and a cooler.
Read the regulations, a small bag of food to eat on the flight is allowed and exempt from the 2 item limit, as is carrying on outerwear, books, pillows, infant safety seats, diaper bags or medical equipment.

And as I posted, what I carry on is small 6 pack size insulated bag, not a large cooler, and it is legal to carry on, and only once have I ever been questioned, and it was a few years ago by a gate dragon before getting on the air train at TPA, who said it was a third item, but when I told her it was a food bag, she said it was okay.
