the SFO kitchens, from what I understand, are having issues preparing this dish the way it was intended. I've seen this dish from several other kitchens and in each case it's been, at the very least, decent. It seems to range in "cheesiness" (no jokes please), depending on the batch I suppose, but is unmistakably "mac n cheese" in each case. The crumbs on top are supposed to be a parmesan/panko mix and, when done right, add to it quite nicely. It feels a little strange offering mac n cheese in a First Class cabin but I think the intent was to provide something more filling then the appetizer plates offered previously. I think it's a nice, satisfying dish when prepared correctly.
