Likely because 99% of Americans wouldn't actually eat genuine Swiss style fondue and to create a restaurant that serves it would be cost prohibitive.
I learned to make authentic fondue many years ago, and I still use the same Swiss pot and burner my brother brought home from Zurich. When you use the imported, authentic cheeses, good quality wine and and decent kirsch, it can easily run $25 just for the basic ingredients. Start adding in labor, rent, utilities, taxes, liability insurance, a lawyer to make sure you comply with the local ordinances which govern the temperature at which oil can be brought or held at the table (no, I'm not kidding - local laws killed my favorite fondue place in CA) and you end with a very expensive meal. Not a workable business model.
And not that many Americans actually like Emmenthaler or other very strong Swiss cheeses - noticed how popular the "modified Swiss" or "domestic Swiss" are while strong flavored, top quality the imports are very hard to find?
As for the OP's review, it sound more like a personal grudge than a restaurant review. We've dined at several different Melting Pot locations and never found the food to be of "Subway" quality.
This chain aims more for the social meal market than the authentic experience, but that's fine for those are looking for a fun place to eat with friends.
