I think you've just been lucky. It all depends on the time of day you arrive. Living in IAH and arriving internationally often, clearing Immigration/Customs can range between 20 minutes and up to two hours. If you arrive when most europeans flight arrive, you will be stuck for a while.
Not having Global entry can take a loooong time, but having Global Entry - I have NEVER had to wait for a machine..... Usually thru immigration in a couple of minutes. The longest thing is the walk from the plane to immigration.
