IAH is one of the easiest airpors for intl-domestic transit. Without luggage, and without GE, I have made it from plane to President's lounge in as little as20 minutes. The longest connection time for me was 35 minutes with 3 pieces of luggage to cliam and recheck at IAH. I've connected thru LAX, SFO, ORD, EWR, IAD and ATL and IAH is by far one of the most convenient.
I think you've just been lucky. It all depends on the time of day you arrive. Living in IAH and arriving internationally often, clearing Immigration/Customs can range between 20 minutes and up to two hours. If you arrive when most europeans flight arrive, you will be stuck for a while.
