As for status perks, I usually stay at Westin/Hilton/Marriott full service for conferences...but they tend to be oversold every time, and I've never got an upgrade to anything...ever.
That said, I would go with Hilton. You can usually check the menu on-line and see what they will have every night they serve. It is often quite good and you can save your per diem dollars for later.
