Hi Ben...
Burgundy is nice and Shangri-la ist lovely....
I am sure you will enjoy Shangri-la

Paris is a lovely city and i bet you will be out and exploring the city everyday..
Best bet.. stay modest in nice botique for your first few days - while exlporing the city and then move to the luxury one on your last journey - so you can really enjoy their property & services...(choose one with spa & pool facility)

Burgundy is the best choice , but here are some other boutique hotels that i found acceptable (which you might know) are :

- Hotel 7 Eiffel Paris (http://www.hotel-7eiffel-paris.com/)
- Hidden Hotel Paris (http://www.hidden-hotel.com/)
- Hotel Beauchamp (http://www.hotelbeauchamps.com) - part of GLA hotels
- Hotel Jules (http://www.hoteljules.com/) - part of GLA hotels
- Le Walt (http://en.lewaltparis.com/)
- Hotel Eres (http://www.ares-paris-hotel.com/)
- Hotel Keppler (http://www.keppler.fr/en/)

Rennaissance / Westin / Sofitel are OK - sometimes even better than the boutique one..

I know you had bad experience with Hyatt - but do love Park Hyatt vandome Paris..
PH Sunday Brunch is great... you should try it... - or the best one at THE RITZ for a royal treat... love their sweets selections...

You might also wanna check out to new edition of Intercontinental in Paris - Intercontinental -avenue Marceau -the style is light and modern... it is more boutique style.. Be Ambassador Member and use the one night Voucher combine when you stay on the week-end - plus upgrade, it is worth it !

Hope it helps -
