As described it isn't a very nice transfer, you would need minimum of 2 hours in order to meet the AC check-in cutoff and immigration/customs can be backed up severely in T3 YYZ (though maybe not as bad as in T1 which made the news last month, with some pax taking over 5 hours to clear customs that week -- due to school holidays). Flying via JFK would have been more pleasant (yes, AC and the airport is that bad for transfers). As for interlining bags, AC will not interline with CX on separate tickets (unless this policy changed recently), very annoying and it means you'll have to take bags over to the other terminal and join the huge AC queues.
