Unfortunately, I'm not sure I can be of much help either. Although I've been to HKG many times, I've always had friends meet me at the airport. What I can tell you is that in the terminal 1 arrivals hall, across from exit B, there are quite a few information desks from most of the best hotels in Hong Kong. I haven't paid enough attention to notice if the Le Meridien is among them, but I have a feeling that's where you'd check in if it does have a shuttle from HKG.
I think your best bet would be to email the hotel to confirm if a shuttle from the airport is indeed available. IMO, HK$100 seems awfully inexpensive for a shuttle from HKG all the way to the Le Meridien.
