It's walkable from the W to the ferry pier at Hong Kong China City, but it's not a nice walk, passing the huge construction site of the future highspeed rail terminus. If you have luggage, better just take a taxi.
From the Hyatt in Shatin, you will be better off going to the ferry pier in Sheung Wan on HK Island, meaning East Rail to Kowloon Tong, switch to Kwun Tong Line to Mongkok, switch to Tseun Wan Line to Central, and switch to Island Line to Sheung Wan.
From University to Sheung Wan, it takes about 45 minutes, based on MTR's website. 10 minutes to get up to the ferry ticket counter. If no wait, you can buy a ticket for the next sailing in 15 minutes or so. An hour of ferry ride. Unless you have Macau or HK ID, pre-registered, it's about 15 minutes wait to get through Macau immigration. So, that's 2.5 hours minimum when you hit the taxi or shuttle stand at the ferry pier on the Macau side, from the Hyatt in Sha Tin. Then it depends on what hotel you're staying in Macau and/or how long the taxi line is.
Clearly, a lot faster and easier if you're staying at the W and just take a taxi to Hong Kong China City (takes just a few minutes), even though that ferry runs every half an hour, instead every 15 minutes from Sheung Wan.
