i just did this for ~ HKD 25,500 incl. tax, booked in D class which was "business standard" and had free date changes both departure and return and a neglgible cancellation fee. No HKG stopover allowed though (e-ticket center defined this for me as < 24 hrs between flights). I think if you do want a stopover you might need to get a Taiwan-based TA to book or you can try the multi-trip booking on cx.com. Probably a small fee to add a stopover.

I structured the onward HKG-TPE flight on the day following my arrival from YVR so there is no way they will not let me check the bags only to HKG.
