BA331 was departing at 07:30 (winter time) and IB has several flights departing around the same time which is their busiest time (all the aircarfts from MAD, BCN overnighting in ORY), so I doubt that they could divert four agents all the way to Hall 3. Might be different for the other two BA daily flights.
As you've said, maybe they have a different company handling them depending on the time of day. It was definitely Iberia staff this afternoon.
I would never want to use ORY if connecting to longhaul for fear of not having a BA agent able to reroute me in case of delay, etc...Unless BA organize their act at ORY, they will mostly get low-margin leisure pax.
Non-BA agents at some airports are actually quite good with rerouting. I wouldn't necessarily worry about that aspect of it until ORY ones are shown to be less capable than BA staff.
It's the location of the lounge and also access to ORY by public transport from Opera area that puts me off going through ORY again.
