I live in Amsterdam, and I think spending 3 days here is more than enough to see everything you'd really want to see without exploring too deep. You could visit other towns in the NL like Maastricht, which is in the southern part of the country. Also, like others said, I would visit Brugges, and possibly Ghent or Antwerp as well.
