If you can afford Amanyara, definitely go there... you're not likely to be disappointed with any Aman property, especially during low season when they tend to be overstaffed, underpopulated and seemingly anxious to fulfill your every wish.

That said, if Aman is out of your price range, you might want to consider Mexico. There are some really gorgeous small resorts located just outside of the bigger destination towns -- not so far out that you can't easily do some sightseeing or run into town for some social fun, but not so much in the middle of all the tourist chaos that you feel like you're in... well... Florida!

An example of the type of place I'm talking about is the Tides Riviera Maya in the Playa del Carmen area near Cancun. We stayed there on a whim a few years back (when it was still the Ikal del Mar) and found it nearly perfect (for our needs at the time). Nice pool area. Quiet white sand beach. Good snorkeling. Private plunge pool at your villa. Lovely staff. Pleasant guests. Excellent service (attentive yet low-key). The spa was a bit blah back then, but the services were quite good. They even got a rental jeep delivered to us at the resort so we could go see the Mayan ruins and play around in Playa del Carmen.

You'll find many more of these types of places throughout the Mexican coastal areas if you take a look.
