I really like it curried. I make a coconut curry that uses cauliflower, carrots, and sugar snap peas. Yummy!
Mix 1/2 cup brown rice, one small diced onion, 1.75 cup chicken broth in to a pot and bring to a boil. Next add 1 garlic clove, 1 tbsp minced ginger, 2 tbsp curry powder, 1/2 tsp salt, 1/4 tsp ground cumin, 1/4 tsp cardamom, 1 tsp soy sauce, and a little honey. When rice mixture is almost fully cooked add 3 cups of the above steamed veggies and 1/2 cup of coconut milk. Sometime we add tofu or chicken, too.
